We are waiting on the new Tabachines Cocina restaurant to open at 517 So. Spring Street, but we have been waiting since August of last year. According to the restaurant’s Twitter account, they will serve “fresh, healthy Mexican food, the way it was meant to be.” On Facebook they write, “There is no space for precooked ingredients or canned goods in our pantry! Just like our mothers who would shop daily at Mercado, for us, fresh produce is a fundamental part of our kitchen. We use locally grown and organic products as much as possible.” Images of the food posted on social media look mouth-watering, especially the Pozole Verde, Conchita Pilbil, Torre de Tastada and Tacos de Huevo.
Tabachines Cocina’s interior is being designed by Restaurant Impossible’s Lynn Kegan. A preview image (below) of the interior was posted online back in November 2014. There is no word on the grand opening date, but we hope it is soon. We are hungry!
Oh, and if you are asking, “What is a Tabachine?” It’s the name of the flaming red flower that grows on a Royal Poinciana tree.
